Open pasture and native grasses, with room to roam — never confined, never rushed, never a feedlot. That's the flavor foundation you can taste in every cut.

Natural grain finish

Grass fed, then finished naturally on grain for the final 45 days on the same farm. That's where the marbling, buttery texture, and rich beefy finish come from.

The whole animal, nothing less

We don't run a cut list. You buy a share of the animal — quarter, half, or whole — and our licensed butcher handles the harvest and every cut. Every steak, roast, and pound of grind is yours.

How It Works

From our pasture to your plate, in four steps.

No grocery store mystery. You know the farmer, the animal, and the butcher — and you pay one honest price per pound of hanging weight.

1.

Reserve your share

Choose quarter, half, or whole and place your deposit. We set aside one of our animals and book your harvest date.

2.

Raised by the farmer

Your animal is grass fed on pasture, then finished naturally on grain for its final 45 days — all on the same farm. You get updates along the way.

3.

On a half or whole

Every order is discussed on a personal call — we go over the cut sheet together, cut by cut. Thick-cut ribeyes? More grind? Your call. Quarters receive the butcher's standard cut, a balanced mix of everything.

4.

Fill your freezer

Once your animal is harvested, your beef is cut, vacuum-sealed, labeled, and frozen by the butcher. Pay the balance on hanging weight and we meet you to hand it off.

One price per pound of hanging weight. That's it.

Quarters and halves are $7.25/lb, whole steers $7.15/lb on the hanging weight — subject to change — with all fees included: cut, vacuum sealed, labeled & frozen by North Florida Custom Meats. We do not sell individual cuts of meat.

What's Included

This is what a quarter actually looks like.

Ribeyes, T-bones, sirloins, tri-tip, roasts, cube steaks, short ribs, brisket, 35+ lbs of ground beef, soup bones, and fat for tallow. Exact amounts vary with each animal — you're priced on the actual hanging weight, never a guess.

Half and whole orders scale up from here and go fully custom.

Organs (liver, heart, tongue, oxtail) upon request — first come, first served. One customer per animal.

By special request

Prefer 100% grass fed? We also offer grass fed, grass finished beef — no grain finish at all — at a more premium price. Just mention it when you reserve or when you call Stacy.

Our Angus cattle are raised and finished by a fourth-generation farmer in Palatka, Florida — grass fed on open pasture with a natural grain finish for flavor and marbling. No feedlots, no hormones, no routine antibiotics, no mystery meat — ever.

You buy a share of the live animal, and North Florida Custom Meats — our licensed butcher — does the harvest, dry-aging, cutting, and wrapping. All processing fees are included in your price, so everything stays simple and by the book. When you reserve, you get our phone number and a straight answer to every question.

Reserve Your Beef

Tell us what you'd like and we'll confirm your animal and harvest date within 48 hours. A deposit is required to reserve your steer, and all butcher fees are included in your price. We meet you at a central location across Jacksonville, FL and the surrounding counties.
